With all of the great fresh grocery offers that we have been seeing, here is a super simple, flavorful recipe for your family tonight! I used the Half Price Fresh Groceries From Amazon Groceries, as well as the Farm Fresh Organic Delivered Groceries for this one, as well as some local sales. I love grabbing the frozen shrimp (cooked or uncooked) that come around every few weeks for a couple of bucks a bag. Here’s how I throw the whole thing together.
Buttery Garlicky Shrimp Scampi Fettuccine
1lb Pasta
2c broccoli
1/2lb cleaned shrimp
1/2c butter
1/2c white wine
1 lemon, juiced
2 Tbl minced garlic (or more!)
1/2c parsley (more for garnish)
1/2c Parmesan cheese
olive oil, salt, pepper, diced tomatoes, and red pepper flakes as desired
- Put a pot of water on to boil, and prep all of your ingredients. This can all be made in one pot, so I would recommend making sure that everything is ready to go ahead of time.
- Add the pasta to the boiling water. About half way through cooking (5 min), add the chopped broccoli. Finish cooking the pasta (about another 5 min), and drain. Set aside.
- Add a swirl of olive oil to the pan, and add your shrimp. Season with salt and pepper. Cook for 1-2 minutes, and then flip. Add the butter, and once melted, add the wine, garlic, lemon juice, parsley, season with salt and pepper, and cook for another 2 minutes, or until the shrimp is done.
- You can either add the pasta/broccoli back to the pan and toss, or I would recommend just platting the pasta and pouring the shrimp/butter directly over the pasta. Garnish with parsley, tomatoes, and Parmesan cheese. Serves 4 (real size meals)
