As parents of a child under one, we have been exhausted. Everything that would normally take just a few minutes sometimes will take an hour, and just running to the store to grab a gallon of milk seems like a huge endeavor. Pan Seared Steaks w/Oven Fries and Cherry Tomato & Corn Salad

This pan seared steak was juicy, and the fries were delicious. I was very surprised by the aioli; it was such a great dipping sauce that everything ended up in it! I think the star was the Cherry Tomato & Corn salad. This was such a bright, flavorful salad; I will definitely be making this one again! Overall this was a very hearty meal without being heavy.

Crispy Chicken Tenders & Hot Honey, w/Potato Salad & Marinated Cucumber

 

I really wasn’t expecting much out of this one, but it might have been our favorite. Hubby was trying to find ingredients that same night to remake these because they were so good! The cucumber salad was delicious, and the hot honey was surprisingly good (especially since hubby doesn’t like spicy). The warm potato salad was incredible; I will never make another cold potato salad again! I also really appreciated how easy it was to make the chicken tenders, and had never worked with Matzo Meal before. These had a ton of flavor and were perfectly juicy and cooked.

Sweet & Spicy Beef w/Jasmine Rice & Crispy Shallots

Wow, this was great! There were so many great veggies in this dish, and the crispy shallots really pushed this over the top. Neither of us could believe how delicious those were! This had traditional Thai flavots, including a spicy-sweet sauce, fresh herbs, and the crispy shallots on top. There were sauteed summer squash and sweet peppers as well, all on a bed of Jasmine rice. This was a great dish to use up a bunch of odds and ends in your fridge with this recipe card when we remake it again.

Overall, the recipes are very simple, and since you get a recipe card, you  can make your favorites over again (which we have done). The food is cheaper than fast food, and is pretty healthy and balanced. I would recommend the taste of the meals, the quality of the ingredients, as well as the variety in the meals as well.
