Baby Cereal Pancakes: Super Simple FLEXIBLE Recipe!!!

As many of you know, I stocked up a bit when I was pregnant in order to make sure that I would not have to do any baby related shopping for the first year. We bought 100 packs of diapers and wipes (final cost was a $20 MONEY MAKER), all of our clothes through Schoola for FREE, and tons of baby food through various store deals; focusing on getting only the FREE or money maker deals (since I was going to blend and bottle my own baby food daily, LOL). Well now I have an extra case of baby cereal, since Alex decided to eat it for a whole week and then move on…so…I have been looking for alternative uses. Here is a great recipe to make super easy pancakes. You can do several variations, depending on what you have on hand or what the baby will eat (or if you need to add something specific into his diet, like protein or veggies or whatever). You will want a cake batter or thicker consistency when you are done, so just add as much liquid as is necessary to achieve the right consistency. Here’s my favorite recipe of the SEVERAL I have tried (most of which were complete failures):

Rice Cereal Pancakes

1/4c-1c Breastmilk, Formula, Water, or Apple Juice (or any combination)
1 Jar Baby Food (any flavor or “chunkiness level”)
1 c Flour (this should be easily substituted for any type of flour for sensitive tummies)
1 c Baby Rice Cereal (any flavor)
2 Bananas (or any fruit, mashed/pureed)
2 Eggs (if you prefer egg whites only that should work too)

  1. In a bowl, mash your fruit. Alex loves bananas, so that was my first choice. I also had a jar of baby food that I had just opened but Alex decided he wasn’t hungry any more, so I threw that in. It happened to be Sweet Potatoes; I couldn’t taste it in the pancakes, but Alex LOVED them. I also had a couple of ounces of breastmilk from a morning feeding he hadn’t finished so I threw that in, and made up the remaining consistency with water (or whatever liquid you prefer, recommended from the list above). Add the rest of the ingredients and mix together. (you can also add peanut butter, blended veggies or meats, etc that your child is missing from their diet as well; they’ll never know!)

    The easiest way to portion these out is with a 1/4c measuring scoop; cook on a griddle or pan until you see bubbles on top. You should be able to flip them easily at that point. If they start to mush when you try to flip them, try giving them another minute or two. These took about 5 minutes per side.
  2. Once they are done, place on a cookie sheet in the freezer, single layered. Let them freeze overnight, and label and bag into a freezer bag. DONE!
Alex LOVED his pancakes; he immediately laid on the floor to chow down!
