As parents of a child under one, we have been exhausted. Everything that would normally take just a few minutes sometimes will take an hour, and just running to the store to grab a gallon of milk seems like a huge endeavor. Over the past several months, in order to try to get ourselves up and out of this craziness that is “new parents syndrome”, we have tried several meal delivery services, and we have been super happy with the results. Blue Apron offers fresh ingredients and a variety in their meals. When I would just throw some chicken in a pan, Blue Apron comes to the rescue with a new catfish recipe, or a new steak meal. Of all of the meal delivery services, Blue Apron is the one that I have ordered the most, just because their pricing is best and their recipes are good. Another thing that I love about Blue Apron is in addition to trying out new ingredients or recipes that you would not normally try, you also get to learn how to work with new ingredients. I have learned about how to work with Tarragon, using biscuits as sandwich bread (wow!), and also made grits for the first time. These new tastes and techniques really spice up the kitchen in our home, and cooking becomes a whole family event. I do have to admit that I LOVE the novelty aspect as well. This week, I received 3 meals, each for two people (although there are family meals which feed 4). The first was Sirloin Steaks with Spiced Potatoes and a Tarragon Cream Sauce. As a “carb-junkie”, I am always looking for new ways to prepare my potatoes, and this one was a keeper! These were tossed in a spice and baked, and then had the tarragon cream dipping sauce; almost like an elegant ranch (is there such a thing?). The steaks were delicious, and the directions lead me to an easy, perfect medium rare.
The next meal was a Spicy Ponzu Glazed Catfish dish. I don’t know about you, but catfish is not something that we pick up on our grocery trips. Also, hubby is not a fan of seafood, so he was a bit skeptical about this one. This was a marinated catfish, cooked with a sweet ginger/garlic glaze that we basted in the pan, and topped with sesame seeds, crushed peanuts, and green onions. The basmati rice was so good, and a perfect compliment to the sweet and spicy fish (hubby loved it!!).
The last meal (aw!) was Hoison Turkey Meatballs. These were super easy to make; in fact, my husband made these while I nursed our son (feeding the whole family lol!). These meatballs were very simple to make, but packed a ton of flavor. Tossing them in the Hoisin sauce made them even more delicious, and they were served with a brown rice and zucchini.
Overall, the recipes are very simple, and since you get a recipe card, you can make your favorites over again (which we have done). The food is cheaper than fast food, and is pretty healthy and balanced. I would recommend the taste of the meals, the quality of the ingredients, as well as the variety in the meals as well.
