I LOVE lettuce wraps, and it seems that whatever restaurant I start to get them at, they remove them from the menu (or the restaurant leaves!!). Here is a REALLY good substitute to handle that hankering for deliciousness :).
1/2 lb ground chicken
1 Tbl minced garlic
1 c minced onion
2 tsp minced ginger
1 green onion
1/2 cucumber, cut in 4, and sliced
leaf lettuce (butter, iceburg, even Romaine could work!)
1 8oz can water chestnuts, drained and diced
3 Tbl red wine vinegar
2 Tbl hoisin sauce
1 Tbl peanut butter
2 tsp chili garlic sauce
2 tsp Tabasco
4 Splenda packets
1 tsp sesame oil
Saute garlic for 1 minute, and then add onion, cook for 3 minutes until it begins to get translucent. Add chicken and ginger, and stir. While those cook, mix the water chestnuts, vinegar, hoisin saice, peanut butter, chili garlic sauce, Tabasco, Splenda, and sesame oil until well blended. When the chicken is done cooking, add this dressing mix to the chicken, and allow to cook for one minute to heat. To assemble, place a leaf of lettuce on the plate, top with some of the chicken mixture. Top with sliced cucumber and green onion.
Very quick and easy, with mostly ingredients you have on hand, and super healthy too!!
