Kale and Brown Rice Soup; Delicious, Quick, Healthy, and Economically Friendly!!!

Here is a delicious soup recipe for you! I love making this in large batches and freezing for later. It is super filling and good for you, and is great with a bunch of toppings or none at all. I made a bunch of this when I was pregnant, and I am still pulling these out of the freezer. Even hubby, a self proclaimed anti-soup person, loves this one! It is also great because you can get a bunch of these ingredients with coupons to make it for super cheap! Here is your EASY recipe:

Kale and Brown Rice Soup
4 sliced shallots
2 chopped carrots
1 large chopped bell pepper
8 ounces ground chicken
1 can diced tomatoes (drained)
5 cups chicken broth
1 cup cooked brown rice
4 cups chopped kale (or swiss chard)
1 tsp rosemary
1 tsp basil
1 tsp thyme
salt & pepper
parmesan and parsley for garnish, if desired

Saute all of the veggies (shallots, carrots, bell pepper) for a few minutes, until they begin to get soft. Add the ground chicken, and cook until done. Add basil, thyme, rosemary, salt, and pepper, and cook for one minute. Add diced tomatoes, broth, and cooked ice, and bring to a boil. Add kale and simmer for about 15 minutes.

Garnish with parmesan, mozarella, parsley, or avocado, and serve with some toasty garlic bread. Delicious!!
