Superhero Cookies: My Secret To Getting Tons Of Protein + Veggies Into My Baby’s Diet!!!

As the parent of a toddler, I am constantly struggling to get extra protein and veggies into our son’s diet. I have discovered an awesome way to get this in consistently on a daily basis with an easily modifiable cookie recipe. My mom calls these “Superhero Cookies” since they help our son grow big and strong (and also because he is obsessed with superheroes, so eating 1-2 a day is an easy sell 🙂 . As a couponer, I have a stockpile of baby cereal, or you could also use formula as well. This is the “flour” base, and you can add in whatever you need to make it work. Similar to the Baby Pancakes recipe, this is a great way to sneak in extra goodness that might not otherwise make it into your child’s diet. You can even freeze the dough to make up as needed, or freeze the cookies after baking.

Superhero Cookies

1/2 cup cooked kale or spinach
1/2 cup dried cranberries
1/2 cup peanut butter
1 cup fortified baby cereal (dry)

  1. Finely chop the spinach and cranberries, mix with peanut butter. Add enough cereal to make a workable dough.
  2. Form into 1″ balls, place on baking sheet and flatten into cookies with a fork.
  3. Bake at 375 degrees for 15 minutes.
